Crunchy homemade granola

kcalThis delicious granola is so quick & easy to make, it can be used for a yoghurt bowl as here in this recipe, or a snack like a trail mix.
The kids love this recipe because they can top it with any berries or other fruit they like and best of all they can prepare it themselves. If coconut yoghurt is unavailable substitute with whole milk greek yoghurt.
Ingredients
- Almonds, with skin 150g 1 x cup, chopped
Macadamia nuts, unsalted 150g 1 x cup, chopped
Nut, cashew, raw, unsalted 150g 1 x cup chopped
Nut, pistachio, raw, unsalted 120g 1 x cup
Seed, pumpkin, unsalted 100g 1/2 cup
Seed, sunflower, unsalted 100g 1/2 cup
Coconut Oil 60g 4 x tablespoons
Mixed berries, (Per Serve) 70g 1/2 cup
Coconut yoghurt, natural (Per Serve) 60g 4 x tablespoons
Coconut, Shredded 50g 1/4 cup
Rice Malt Syrup 45g 3 tablespoons
Cinnamon, dried, ground 5g 1 x teaspoon
Sea Salt 5g 1 x teaspoon
Directions
- Pre-heat oven to 180°C and line a baking tray with baking paper.
- Combine all ingredients in a large bowl and mix thoroughly ensuring the wet and dry
- ingredients are well combined.
- Spread the granola evenly on the baking tray and bake for 10 minutes. Check regularly to
- ensure that it does not burn.
- Remove from the oven and allow to cool.
- This will be kept in an airtight container in the fridge.
- To serve, place ½cup granola into a bowl and top with coconut yoghurt and berries.
